Finn is now 2 weeks old!

Finn's check up

Finn went to the Pedi yesterday and he is already growing like a weed. He weighed 8 pounds 2 ounces, I guess he is eating pretty well. When we left the hospital 8 days prior he weighed 6 pounds and 11 ounces. We are so happy to have Finn, he has been such a wonderful baby. I hope he stays sweet. As we all know Miller was not a very happy baby, but has turned out to be a fine young man. Finn will be 2 weeks Friday and I will try and post some new pics on Friday.

For me I go to the doctor tomorrow and get my steri strips taken off, yea! I am really starting to itch on my incision, which means its healing. I wish it would suck that extra skin into the incision, but I think that is plastic surgery that does that. I am feeling well and pain is greatly decreasing.

He has been a very healthy baby so far. We fought a little jaundice this week, but was able to nurse right out of the woods. We had to take him in twice for bilirubin checks and we are ok. His weight was down more than expected in the hospital, but has now recovered and growing well. We have a checkup on Tuesday. We had the whole fam go to the doctor, lots of fun and will probably all be trucking up there Tuesday. I can not drive yet so therefore it is a family affair.

Trevor will be going back to work next week, Yikes!! Hope I can do this, little late now. Miller has been on Spring Break for 2 weeks now with Dad, going full force. He will be in for a rude awakening next week when his life slows down. We will be doing a lot of house play and feeding Finn all the time. Finn is quite a slow eater, he must not know things are fast paced around here.

I will give a report on the check-up later in the the week.

A Good Healthy Recipe!

Asian Turkey Lettuce Wraps

2 T olive oil
1 cup finely chopped onion
1 lb. ground turkey breast
1/4 t salt
1/4 t pepper
1/4 t garlic salt
1 12 oz. bag of broccoli slaw
1 small can water chestnuts (drained and chopped)
1/2 c teriyaki sauce
1 t sesame oil
approx. 15 butter lettuce leaves (or iceberg)

Place oil in large 5 qt. skillet over medium heat. When hot, add onion and
saute for 5 min. or until soft. Add ground turkey, salt, pepper, garlic salt.
Brown and crumble until cooked through. When turkey is cooked, stir in broccoli
slaw, water chestnuts, teriyaki sauce and sesame oil. Cook for another 10-15
minutes or until heated through. Reduce heat to low until ready to serve.
Serve spoonfuls inside lettuce leaves.
For a kick I made a special sauce to go on my wraps. I just mixed sriracha hot
chili sauce (it's very spicy) with teriyaki marinade (pretty sweet) to your
liking (about 1:1). Really makes it taste like PF Chang's!!!
Enjoy - so yummy! It makes a lot - 15 lettuce wraps

We have few additions in mind and that we are still working on, but for now this is Finn's room. Miller loves to play in Finn's bed and just go in there and look around. But poor baby no clue, 2 plus weeks and his world is gonna be upside down.

We will have the Mathews fam here to see that Miller has a smooth transition. We will start with Kim and MiMi visiting for 2 nights and then Gammy and Pappy here entertaining for 2-4 days, however long they can stand we will enjoy them. Aunt Christen and Uncle Laird will make short appearance of one night here at the Fanning casa with their 2 girls (Stella and Brooklyn), which I am sure will be very entertaining for everyone here.
